BACON CHEESEBURGERS
There’s nothing better than a fresh, hot burger straight from the grill in the summer season, so get your taste buds ready for some meaty goodness in the form of these easy-to-make bacon cheeseburgers.
INGREDIENTS (to serve four)
4 slices of bacon
4 pounds lean minced beef
4 slices cheddar cheese
4 hamburger buns
Sliced tomato
Lettuce
Salt and pepper to season
Ketchup and mustard is optional
Grease a large pan over a medium heat and cook the bacon strips for 10-12 minutes or until crisp, turning them occasionally. Place the cooked bacon on kitchen roll to remove excess grease.
Form the beef into four burger patties of equal size with about 3-4 inch thickness. Season both sides with salt and pepper.
Grill the patties over a medium heat BBQ for 5 minutes. Turn over and grill the other side for a further five minutes. Top with a slice of cheese one minute before removing from heat to allow the cheese to melt. Toast the burger buns for 30 seconds.
Serve the cheeseburgers hot on the toasted buns with some lettuce leaf and a slice of tomato topped with a slice of the bacon. Serve with ketchup and mustard if desired.
PORTABELLA MUSHROOM BURGERS
For the vegetarians and diet-conscious among us, barbecues can be an absolute nightmare with all the meat flying around, but there are some tasty choices for you to enjoy without making you stick out like a sore thumb. Just try this satisfying portabella mushroom burger!
INGREDIENTS
4 tablespoons melted butter
2 tablespoon chopped fresh basil leaves
4 teaspoons finely chopped fresh garlic
4 large portabella mushrooms
4 hamburger buns
Tomato slices
Lettuce
Infuse the butter, basil and garlic in a bowl. Use a brush to generously glaze the mushrooms with the butter mixture.
Place the mushrooms on a medium heat. Turn after five minutes and glaze once more. Toast the burger buns for 30 seconds, glazing the inside with the mixture if desired.
Serve the tender mushrooms hot on the toasted buns with some lettuce and a slice of tomato.
POTATO SALAD (serves 8)
A staple favourite at any BBQ, the trusty potato salad is a great accompaniment for your main meal, or delicious to have on its own! Instead of buying a tub from the supermarket, try making your own.
INGREDIENTS
1kg baby new potatoes
2tbsp olive oil
2tbsp mayonnaise
2tbsp greek yoghurt
1 bunch spring onions, trimmed and chopped
Place the potatoes in boiling water and cook until tender. Drain, cut into chunks. Mix the oil with the potatoes and allow to cool.
Mix in the mayonnaise and yoghurt. Gently stir into the potatoes with the spring onions and then serve.

2 oz. Cranberry juice
2 oz. Grapefruit juice
2 oz. Orange juice
